Ingredients for the crust:

  • 2 cups (205 grams) of almond flour
  • 1/4 teaspoon of baking soda
  • A small amount of sea salt
  • 2 tablespoons of maple syrup (at room temperature) or honey
  • 4 tablespoons of coconut oil (melted and cooled)

Necessary ingredients for the brain:

  • 1/3 cup of raw almonds
  • 1 cup of raw pistachios
  • 1/4 cup unsalted almond butter or pistachio butter
  • 1/4 cup maple syrup or honey
  • 1 teaspoon of pure vanilla extract
  • 1/2 cup of pomegranate seeds

Ingredients for chocolate sweetened with maple syrup or honey:

  • 4 ounces (113 grams) of sugar-free dark chocolate (chopped)
  • 2 teaspoons of pure vanilla extract
  • 1/4 cup of maple syrup (at room temperature) or honey
  • 1/4 teaspoon of sea salt

How to prepare:

  • Heat the oven to 175 degrees Celsius. Grease 4-inch (about 10 cm) tart molds with coconut oil. Mix almond flour, baking soda and sea salt in a medium bowl. Add maple syrup and coconut oil. Mix with a fork until the liquid is evenly distributed and you can press the dough together with your hands.
  • Place six 4-inch tart pans on a baking sheet. Divide the batter mixture evenly between the tart pans. Press the dough mixture on the bottom and sides of the molds. Bake for 10-11 minutes or until the batter starts to brown. Remove from oven and cool in pans on a wire rack. Keep the oven on at a temperature of 175 degrees Celsius.
  • While the crusts are cooling, spread the almonds and pistachios on a baking tray and toast for 5-8 minutes, being careful not to burn the nuts. After they have cooled completely, remove from the tart pans. The crusts must be almost cooled before proceeding to the next steps.
  • In a small saucepan, combine almond butter and maple syrup over low heat and stir occasionally. After complete mixing, add vanilla extract and salt. Place the nuts in a large bowl and add the almond butter mixture. Stir until the nut mixture is evenly coated. Add pomegranate seeds and stir until completely coated. Set it aside and prepare the dark chocolate sweetened with maple sap.
  • Place the chocolate in a microwave-safe bowl, melt the chocolate in the microwave for 30 seconds, stirring after each melt until only a small amount of chocolate chips remain. Stir the chocolate until completely melted, then add the vanilla extract, maple syrup and salt. Stir to combine.
  • Remove the cooled tart crusts from their molds. Using a small spoon, divide the chocolate mixture and spread it over the bottom of each tart crust. Pour the nut mixture over each chocolate-filled tart crust. Refrigerate for 30 minutes or until ready to serve. If the tarts are refrigerated for more than an hour, let them sit out for 5-10 minutes before serving.
